Camp Cooking | Shakshuka in the Tembo Tusk Skottle

While at Padre Island, Texas we made Shakshuka for breakfast and it was amazing. This is a really easy recipe and comes together pretty quickly. You need to plan to make this on your next camping trip. Below is the recipe.

2 large bell peppers
1 medium onion

28 oz can diced tomatoes
15 oz can tomato sauce
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
salt and pepper to taste
Eggs (how ever many you need)

Begin by sauteing peppers and onions until brown. Add diced tomatoes and tomato sauce. Cook until sauce has thickened. Once sauce is thickened make small wells in the sauce using the back a spoon, and crack eggs in the well. Place lid on top and cook until eggs are to your liking.
